Pique Russe Rosé 2016
Pique Russe is the name of the fields, the name of the producer and the name of this wonderful rosé wine. I first tasted it from the vat and knew then it was exceptional for a rosé and I am delighted to be able to bring the bottled version to to our customers.
Made in small quantities using traditional methods Pique Russe wines have a strong following and are growing in reputation, particularly in the Parisian restaurants where most of the production ends up. This is yet another fine example of Yves’ work, a soft, light, fruity wine ready to drink now but which will also stand the test of time (estimated at 3 to 5 years).

|Serve with:||Anything on a warm sunny day. Particularly good with chicken and fish dishes as well as all salads.|
|Yield:||> 30 hl/ha (4-5 bunches per vine)|
|Soil:||Combination of clay and chalk, well drained|
|Cultivation:||Limited production (5 bunches per vine), manual intervention and selection at harvest|
|Vinification:||Manual selection of grapes prior to vinification in small quantities (circa 600 litres) sorted and pressed then left to ferment to preserve the brilliance and aromas of fruits and flowers. . No additional yeasts or additives to aid the fermentation. Agitated manually by baton every one or two days to maintain the lees in suspension for better flavour and to manage the balance of gas and colour. Manual clarification by pouring which may give rise to sediment and occasional cloud. Bottled with slight petillance to avoid overworking the wine.|
